For the episodes there is only one set of Chinese subtitles? Does it say what kind? Same question for the non-commentary extras.

Fixed it. The review does not specify, but I put Chinese (Simplified), Chinese (Traditional). In the past they have said Cantonese when it Cantonese. So, its most likely Chinese (Simplified), Chinese (Traditional).

Yes.

There is no "*" next to Latin Spanish. Which means those subtitles are not available for extras.

I'm looking at the subtitles listing on the left side of that review. It says Español (hispano) *

Spanish (Hispanic) would be Mexico, Latin is more in line with Europe (at least that's what they said when I took "Chicano" and "Spanish language" classes almost a decade ago).

Where are you getting info that there are no Latin Spanish subtitles for the extras?

The stars (*). That is how the reviewer marks which subtitles are available on the extras.

Castilian is what we label as Spanish spoken in Spain. Latin Spanish is what we label as Spanish spoken in Latin America.

Okay, so, then when I see Hispanic. I'll be sure to label it Latin.

It's just here Mexico and the rest below are always considered different. Despite that their languages all originate from Latin (of the Roman Empire). It's kind of like the UK and Ireland are technically part of Europe and to a less extent Turkey. Yet (for a lack of a better wording) are indifferent culture/region wise.

South American/Latin American dub tracks use a neutral form of Latin American Spanish so they can easily be distributed among the countries. There are rare occasions that one country gets differences, such as "Storks" having some voices with Mexican celebrities in their own dub track.
