"The Complete Saga" Fox boxsets have 6.1 audio and 3 discs of bonus features. Just avoid the German releases since the English soundtrack is lossy DTS only.
The US Disney "Ultimate Collector's Edition" and German Disney releases have 7.1 audio and some exclusive extras, though note they do not carry over all previous Fox extras.

Also note that, except for the audio commentaries, none of the extras of the DVD versions has been carried over for the Fox releases. However, 2 of the theatrical trailers and 2 TV spots have been ported over for the Ultimate Collector's Edition
